The wine
- GRAPE VARIETY: 100% Pinot noir from the +500 area
- ALCOHOLIC CONTENT: 12% Vol.
- RESIDUAL SUGAR: 10,5 g/L
Process of elaboration
- HARVEST: Pinot noir: beginning of September.
- FERMENTATION: 1st fermentation in stainless steel tanks at a controlled
temperature of 14-16 ºC. 2nd fermentation in the bottle using the
Traditional Method, with a minimum of 18 months. - AGEING: Aged for more than 18 months in the bottle.
Tasting
- APPEARANCE: Pale pink colour with purplish reflections, small and
constant bubbles, showing its finesse. - NOSE: Delicate and pleasant nose, showing notes of red fruits, such as
strawberry or raspberry, as well as sweet floral notes that mingle with
the ageing notes. - PALATE: Smooth and pleasant on the palate, with fine bubbles and
balanced acidity. We notice the red fruit mixed with creamy notes of
pastries from the ageing.
Pairing
Ideal for Japanese food, salmon or baked fish. Also very suitable for
white meats or buttery desserts.
