A FEAST ON THE PALATE WITH SOLO VIDA

MESA Chef Xavier Van Hecke created a menu with the unique tasting palate of Solo Vida to stimulate all senses.

In the heart of Antwerp, Belgium, MESA Bar & Restaurant serves a unique sharing experience of delicious food & drinks, with cocktails, tacos, dips, bites, and some signature dishes, created with care to share with the entire table.

Inspired by the Tastes of the World kitchen of Tomorrowland, Mesa combines surprising and delicious flavors from all corners of the world.

This spirit of sharing precious moments with friends from all over the world matches perfectly with the Solo Vida heart and soul, so we asked Mesa Chef Xavier van Hecke to pair the unique flavor palate of Solo Vida with some delicious bites. Prepare for a combination of dishes that will make your taste buds pop!

Our culinary journey begins with drinks to work up the appetite; the choice was easy – a glass of Solo Vida, of course.

For starters, the MESA Chef is serving us with a seafood dish that balances the soft and creamy carbonic sensation of Solo Vida Reserva.

The Mesa Team decided on a different take on a classic dish – mussels – and upgraded it with the delicious, tasty flavor of Solo Vida. The hints of citrus that mix with floral notes and light aromas of the Reserva go perfectly with the mussels, resulting in a long-lasting sensation that simmers with every bite.


To top it all off, Xavier used the jus of the mussels and Solo Vida to create a foam that represents the mousse when pouring in a nice glass of Solo Vida.

Now it is time for a palate cleanser with a Granita of Solo Vida.

Lime juice, sugar water, and Solo Vida Reserva are mixed and blast-chilled, which is scraped off when frozen solid. The sensation is fresh, cold, and tangy that works up the appetite for the next dish: Lacquered Bok Choy.

Xavier starts off by making a mousseline foam with Solo Vida as the main protagonist. The bok choy is stir-fried quickly to activate the sweet taste while keeping it crunchy.

Time to assemble the plate; the bok choy is covered with purslane and lacquered with the Solo Vida mousseline foam. Crunchy bread crumb is added with pear blossoms and wood sorrel, which grows in the same valley as the Solo Vida vineyards.

What grows with it, goes with it.

The acidic elements combined with the crunch go perfectly with the dry, fresh, and fruity taste of Solo Vida Reserva; accentuating the notes of white fruit such as apple and pear.

The entire experience truly is otherworldly for your taste buds and with music pumping loud through the speakers, it was time for another Lychee mimosa to end the culinary evening.
